Uncle Mark's Homemade Pancakes

I never used to like pancakes and these converted me! Very fluffy and delicious.

2 cup flour
4 TBSP sugar
4 tsp baking powder
1 tsp salt
1 1/2 cup milk
4 eggs, separated (discard the yolks)
4 TBSP butter, melted

Mix dry and wet ingredients separately, excluding the egg whites. Mix dry and wet ingredients together. Whip the egg whites until firm and fold them into the batter. This makes about 16 4"-5" pancakes. You can also substitute the milk for buttermilk if you want (I prefer regular 2% milk though).  Great with Buttermilk Syrup.

Aebleskivers (Danish Pancake Balls)

Aebleskivers have been a tradition in our family for as long as I can remember. There are certain things that are a guarantee on Christmas morning. Oranges in the bottom of our stockings, and Aebleskivers.

  • 4 eggs (separate whites and eggs and put them in separate bowls)
Beat whites until you get stiff peaks
Beat yolks
Add to yolks:
  • 1 cup buttermilk
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 TB sugar
  • 1/2 tsp baking soda

After mixing, gently fold egg whites into yolk mixture. Do not over-mix or you will lose the air pockets you created when you beat the egg whites and your aebleskivers will come out flat and heavy.

-Warm aebleskiver pan and put 1 tsp shortening, butter, or bacon grease (our favorite) in each cup. Fill each cup 3/4 full. Flip halfway though cooking and finish cooking the other side. We find it easiest to flip using chopsticks. Top with homemade buttermilk syrup, maple syrup, powdered sugar, or fill with jam.

Other variations: (I have heard but never tried) Add things in the middle of the aebleskiver before you flip it like cut up fruit (bananas, strawberries) or chocolate chips.

Whole Wheat Waffles

This recipe was shared with us from Amy Smith. (I've still yet to try it but it looks delicious. Let me know what you think.)

4 Cups White Wheat Flour
2 2/3 TB Baking Powder
1 TB Cinnamon
1 tsp Salt
4 Cups Milk or Water (can use rice milk)
2 TB Olive Oil
1 TB Vanilla Extract
2 Eggs
Combine dry ingredients and wet ingredients separately.
Can add yolks first and then whip whites separately, then add to batter as well (if lack of time, skip this step)

    Grandma Jo's Sour Cream Waffles

    1 cup flour
    1 1/4 tsp. baking powder
    1/8 tsp salt
    1 tsp sugar
    1 tsp baking soda
    2 cups sour cream
3 eggs (separated and whites beaten until stiff)

Mix sour cream and egg yolks. Add dry ingredients and fold in stiffened egg whites. Cook in Belgium waffle maker (I don't know why it doesn't work in a regular waffle maker, but it doesn't).  They should be thick and fluffy.

This is one of our favorite breakfasts and they go fast at our house!!

    Grandma Flanary's Buttermilk Syrup

Well, this isn't a "Dopp" recipe but its worth adopting into any family. Trust me, after eating this syrup, no other does justice. It is my absolute favorite, I must share it!

    4 cubes butter
    4 cups sugar
    2 cups buttermilk
    1 teaspoon vanilla
2 Tablespoons karo syrup (Optional. This just helps it from separating when you store it.)

Boil for 5 minutes then immediately remove from heat and add 2 teaspoons baking soda.
Use a big pan because after adding the baking soda, it may overflow!
    Makes a full pan.
    ENJOY! =D
